Hannah’s soup recipe
I had a cold this week and I made this soup recipe I found on TikTok. It truly brought me back to life, so I wanted to share for anyone reading who may also be sick!
Ingredients
Chicken
4 tbsp olive oil
2 lbs chicken drumsticks
2 tsp kosher salt
2 tsp black pepper
2 tsp garlic powder
2 tsp onion powder
Soup
1 tbsp unsalted butter
1 yellow onion, diced
2 large carrots, peeled and sliced
3 garlic cloves, minced (I use garlic always)
pinch of kosher salt
2 bay leaves
8 cups chicken stock
1/8 tsp ground thyme
1/8 tsp ground sage
1/4 tsp black pepper
8 oz wide egg noodles
Recipe
Season the chicken drumsticks with olive oil, salt, pepper, garlic powder, and onion powder.
In a large pot over medium heat, add a drizzle of olive oil.
Add your chicken and brown each side for a few minutes.
Remove chicken from the pot and set aside.
Reduce heat to medium-low and add your butter.
Melt the butter and add the onion and carrots.
Add a pinch of salt and cook for about 5 min.
Add minced garlic and cook for another 1 min.
Add bay leaves, chicken stock, thyme, sage, and black pepper.
Bring this to a boil, then add your chicken back to the pot.
Cover the pot and simmer for 15-20 min.
Remove the chicken and bay leaves.
Shred the chicken meat off of the bones.
Add the egg noodles to the soup and cook until the noodles are al dente.
Once the noodles are done, add your chicken back in and simmer for another min.

They are zero waste and come in a glass container, which is refillable. So less plastic waste in the world, and less micro plastics in my body.

When my washing detergent runs out I’m planning to switch to laundry detergent tablets. They use plastic free packaging and use less water.

When my toilet paper runs out, I’m planning to switch to this brand. They use recycled paper and their packaging is biodegradable.
I broke down the cost difference of all of the products I mentioned. It’s not cheap to help the planet! And that alone is a reason to not want to make any of these switches. I know that these switches aren’t going to save the world, but it makes me feel just a little bit better aligning myself with brands that care about the environment. I’m putting less plastic and hard metals into my body! And that makes me feel good!
None of this is to say you should make any of these changes or even that I’m not still using so much plastic and waste every day. I’m typing this with my acrylic fingernails, in my Urban Outfitters hoodie. There will always be 100 more switches to make, but here are 4 that I’ve started with.
